HODs team take up the 20th Anniversary Cake Bake Challenge
To kick off our special 20th Anniversary Cake Bake Challenge, the Heritage Open Days team have rolled their sleeves up and got busy in the kitchen.
Classic Lemon Cake by Sarah Holloway
Category 1: Family favourite.
Baking is big on both sides of my family but lemon cake is the one I always remember my grandmother making us. Always perfectly even, light and delicate but with a real lemon hit, I’ve never been able to match it. But this is the recipe my mother gave me and it still raises a smile.
6oz caster sugar
6oz self-raising flour
icing sugar + butter

Victoria Sponge by Nicola Graham
Category 1: Family favourite (with birthday twist)
This was my favourite cake growing up and often found its way onto the tea tray. I especially loved when fresh strawberries were used instead of jam as a summer treat. I have added decoration for this special occasion. Happy Birthday Heritage Open Days!
225g/8oz caster sugar
225g/8oz self-raising flour
2 tsp baking powder
225g/8oz butter, softened to room temperature
Strawberry jam/fresh strawberries & whipped double cream to fill

Category 1: Family favourite with HODs icing
Fairycakes were probably the first cake I ever made with my Mum, and over the years they were the first cakes I made with my nieces and godchildren. But these days it’s all about cupcakes, and so that’s what I now make my youngest niece; each time we always make a different topping. Strawberry seemed the perfect choice on this occasion; suitably summery, and they came out the perfect shade of HODS pink!
125g butter, softened
200g caster sugar
300g plain flour
3 tsp baking powder
1/2 tsp salt
